Honey Lime Salmon

I usually keep my “special” meals for the weekends or Monday nights when I have the day off and the time. I got off work at a decent time today and wanted to cook.  This is one of those easy recipes that make a weekday meal seem special without a lot of effort.

You will need:

  • Wild Salmon Fillets with skin on (I used fresh salmon caught up north by my boyfriend on his yearly fishing trip; so special!) 2 – 4
  •  Salt And Pepper
  •  Olive Oil, For Cooking
  • 2 Tablespoons Butter
  • 3 -5 Tablespoons Honey
  • 3 -5 Tablespoons Low Sodium Soy Sauce
  • 3 whole Limes
  •  Cilantro, For Serving
  •  Cooked Rice, For Serving

Season the salmon with salt and pepper

Heat the Olive Oil and a tablespoon of butter over medium heat.  Place the salmon (skin side down) and grill for about 4-5 minutes until the skin is crispy then turn over for about 2-3 minutes. Pull the salmon out of the pan and put aside on a plate.

Add a little extra oil and butter to the pan then add the honey, soy sauce and lime juice.  Let the sauce simmer for a few seconds to allow it to thicken.  This is where I adjust the flavour by adding extra honey or soy sauce or lime juice to taste.

Return the salmon to the pan and turn it over a few times to coat it with the sauce.  Simmer with the lid on until salmon is cooked.

It’s ready!

Transfer to a serving platter and garnish with cilantro and sliced limes.

I served this with herbed rice and an iceberg lettuce chopped salad.
