An Afternoon At The Farmers Market + My Recipe For The Tastiest Onion Patties.

You know that scene from You’ve Got Mail when Joe (Tom Hanks) and his aunt and brother spend the afternoon at the Fall Fair?  They’re dressed in cozy sweaters as they stroll past tables draped in gingham cloth topped with pumpkins and sweet treats. Face painting,  fishbowl carnival games and cotton candy.  Every time I watch that scene I get this feeling inside; a warm, happy anticipation.  That’s exactly how today felt.  The sun was out and the air fresh. Everyone I met was in a great mood, saying how this is their favourite time of year.  If you know anything about me, you’ll know it’s mine as well.

I felt like a walk after work and headed to the farmers market for fresh ingredients for dinner.  Every Wednesday afternoon, June through October, vendors selling fruit, veggies, meat, herbs, spices and even flowers congregate at Main Street and Terminal Avenue.  Colourful cauliflower, carrots and beets line the stands.  My plan for dinner:  A simple organic green salad (kale, lettuce, arugula, radicchio) and my delicious Onion Patties.  https://eatlocal.org/

Here’s my recipe:

Ingredients

  • 3/4 cup flour
  • A pinch of brown sugar
  • 1 tablespoon spelt flour (or cornmeal)
  • 2 teaspoons baking powder
  • 1 teaspoons salt
  • 3/4 cup milk (I use lactose free)
  • 2 cups chopped onions (I used 2 small onions and 3 green onions and ran them through the food processor)
  • coconut oil (or whatever you use for frying)

Instuctions

  • Mix all dry ingredients in a large bowl then add the milk and stir. This will give you a thick batter
  • Add onions and mix until well blended.
  • If you’re adding extras (cooked bacon, jalapenos, etc.  Add them now).
  • Heat 1/2 inch oil in skillet over medium high heat. Drop batter by tablespoons into the hot oil.
  • Flatten with the back of a spatula, then brown on both sides until crispy, golden brown.
  • Drain on paper towel, sprinkle salt to taste.
